Great Aunt Jean’s Eclair Ring
This is an old family recipe & I wanted to share it with all of you! I remember the many special occasions my grandma and mom would make it for our family. I decided to share it with my family for my father-in-law’s 70th birthday.

boil water, melt butter, add flour to form a ball on the stove
beat eggs with a hand mixer one at a time
spread out into a ring
add milk, instant pudding, vanilla to whipped cream

melt chocolate, butter, milk, then add powdered sugar
Eclair Ring Recipe
1 c water
1/2 c butter
1 c flour
Bring butter and water to rolling boil. Stir in flour over low heat until it forms a ball. Remove from heat. Beat in eggs, one at a time, using electric beater. Spoon onto ungreased cookie sheet (shape – round, oval, individual or tiny for appetizers with filling)
Bake 400 for 40-45 min. Cool away from draft; slice through middle.
Mix 2 small packages vanilla instant pudding and 2 1/2 c milk. Fold in 1 c whipping cream (2 c whipped or use 2 c Cool Whip). Add 1 tsp vanilla. Fill bottom of ring; replace ring.
